Chuck Roll is one of the largest parts located in the beginning of the loin, which runs from the shoulder to the back.

Trivia....

Chuck Roll is also called "KURASHITA" in the Kansai region (west part of Japan like Osaka, Kyoto area). This means "under the saddle" and it is the meat under the saddle when you ride a horse or a cow. "Kura" in Japanese means saddle and "Shita" means under. It is often referred to as "KURASHITA" in Yakiniku restaurants (Japanese BBQ), so you should keep this in mind! !!

Chuck Roll can be eaten in various ways such as Steak, Stew, Sukiyaki and Shabu-Shabu and Sushi due to its moderate marbling. It is often sliced thinly in order to bring out the flavor of the meat.
