How it tastes??

The texture of the meat is rather coarse and stringy, but the red meat has a strong umami flavor and the juice overflows, which is characteristic of pepper.
Taking advantage of this characteristic, it is often used for roast beef or block meat.

Where the Brisket is located??

It is a part of the shoulder, near the shoulder blade, and is treated as a rare part because not much meat can be obtained from one head.

Best cooking

It goes well with grilled meat or roast beef made with block meat.
Since it is a lean meat, there is no need to trim off the fat and it can be used directly for roast beef.

For barbecued beef, it is best to cook it as rare as possible and not cook it too much so that the center is tender.
There are even restaurants that originally served it as tataki, so I recommend eating it raw with both sides seared, but do so at your own risk.
The texture is similar to that of a tender thigh or FILET MIGNON.
It can be eaten with soy sauce, sweet sauce, or salt and pepper if you want to taste the flavor of the meat.
